Sweet Potatoes

Bok Choy

Granny Smith Apples from Clarks Produce

Spaghetti Squash from County Line Produce

Fried Green Tomatoes

3-4 Medium green tomatoes, cut into 1 cm slices

2 Eggs, beaten

1/2 c Buttermilk

1 c Flour

1/4 c Cornmeal

1 tsp Salt

A pinch of baking powder

2 c Tripple filtered coconut oil

Beat eggs and milk in medium bowl. Once well blended place tomato slices in the bowl and stir gently to coat all of the surfaces. In a seperate bowl mix flour, cornmeal salt and baking powder. Heat oil on high in a skillet until hot. One by one, take a tomato slice out of egg mixture with tongs and embed in flour mixture. Once all sides are coated remove from flour mixture and place in hot oil. Repeat until skillet is full. You may have to do a couple of rounds in the skillet. Once one side of the tomatoes are golden brown flip and cook the other side. When both sides are done remove with tongs from heat and place in a colindar to drain. Serve on a platter hot.


Creamy Turnip Mash

6 Medium turnips, with tops removed

4 oz Cream cheese

1/4 c Sour cream

Salt & pepper

Boil turnips on high heat for 20 minutes then drain in a collinder. Place turnips, cream cheese, sour cream and salt & pepper in bowl. Use a potato masher to smash ingredients together. You can also use a whisk attachment on an electric mixer and beat for one minute. Serve hot.
