Garlic scapes 

Kale 

Mulberries 

Radishes 

Butterhead lettuce 

Zucchini

Savory Waffles

Use a basic waffle recipe and add the following ingredients.

3 T. Finely chopped garlic scapes

2 c. Shredded zucchini

1 c. De-veined and finely chopped kale

4 oz Shredded cheddar

Stir ingredients into the waffle batter until everything is covered. Pour 1 c. of savory batter into a waffle iron and cook for a couple of minutes until waffle is golden brown. Remove from iron and serve immediately. Repeat until batter is gone.

Southern Wilted Lettuce Salad

In a bowl toss the following ingredients:

1 Head of chopped lettuce

1 c. Finely sliced radishes

1/2 c. Finely sliced green onions

In a small sauce pan heat the following ingredients on high for 3 minutes stirring constantly. We don’t want it to get to a boil but we do want to dissolve the salt and sugar.

1/4 c. Water

2 T. Honey or sugar

1 T. Sea salt

2 T. Dijon or seedy mustard

1/2 c. Apple cidar vinegar

1/2 c. Olive oil

Once salad dressing is steamy, pour it over the salad, toss and serve immediately. Great with savory waffles.
