Cherry tomatoes
All blue potatoes
Cucumbers
Sweet basil
Garlic
Carrots ( Van Sui Family Farm)
Onions
Tiny greens
Green beans (Moyer Farm)
Cucumber Brine Salad
1 large cucumber thinly sliced
2 Tbs salt
1/2 medium onion thinly sliced
1/2 c vinegar (white wine or apple cider)
2 c water
1 tsp salt
1/2 tsp dill
Toss sliced cucumbers and 2 Tbs salt in a colander and let set over a plate or sink for 30 min. After they have set, press the excess juice out through the colander. Toss cucumbers and onion slices in a medium sized bowl and add the remaining ingredients. Chill for 1 hour before serving.
Cherry Caprese Salad
1 pt cherry tomatoes
1 bunch of fresh basil, destemmed
1 lb mozzarella balls
1/4 c olive oil
4 Tbs balsamic vinegar
salt & pepper
Toss every thing in a medium sized bowl and serve. Easy!
