Fresh Okra with Tomatoes and Ginger
INGREDIENTS
2 garlic cloves, chopped
1 (2- by 1 1/2-inch) piece peeled fresh ginger, chopped
2 tablespoons vegetable oil
3/4 to 1/4 teaspoon dried hot red pepper flakes
3 large tomatoes, cored and quartered
salt and pepper to tast
1 lb small fresh okra, untrimmed
PREPARATION
Pulse garlic and ginger in a food processor until finely chopped and transfer to a 12-inch heavy skillet. Add oil and red pepper flakes to taste and cook over moderate heat, stirring, until fragrant, about 1 minute.
Pulse tomatoes with salt and black pepper in processor until coarsely chopped and stir into oil in skillet. Cook, uncovered, over moderate heat, stirring occasionally, 10 minutes. Stir in okra and simmer, covered, until just tender, about 10 minutes.
CSA Open-Faced Sandwich (or Tartine if you’re feeling fancy)
Ingredients:
Eggs
Peppers
Onions
Herbs
Bread and butter
Preparation:
Using the amounts you have available or want to serve up, dice all vegetable ingredients. Saute the pepper and onion over medium heat in a small amount of olive oil until soft or caramelized (your choice). Then, add the herbs to the pan and saute for another minute more. Last, crack a couple eggs into the pan and cook to your liking. Serve open-faced over a thick slice of nice, buttered bread.
So many tomatoes!
If you’re unable to eat up your tomato share before they start to turn on you, consider one of the following:
1. Can them
2. Freeze them whole
3. Make a skin cleanser
4. Make a big pot of tomato soup
5. Use them for sunburn relief
6. Fix up some bruschetta
7. Share them with your neighbors
8. Grill them
9. Make some pasta sauce and freeze it
10. Make some pico
